Residency towers revives ‘Undivided Punjab’ Cuisine

The Residency Towers has launched “Undivided Punjab,” a four-day culinary pop-up at its open-air poolside restaurant, Afghan Grill, celebrating the shared food heritage of pre-independence Panjab. Curated by culinary researcher and chef Sherry Mehta, the festival runs from November 27 to December 7 and brings back rustic flavours, heirloom recipes and cross-border culinary memories that defined the region before 1947.
General Manager Mr. Amarnath S. said the event aims to evoke nostalgia, not just showcase food. “These dishes represent stories, migrations and the warmth of homes that existed before borders,” he said, noting that Afghan Grill’s setting enhances the dining experience.
Chef Mehta, founder of Ver Roots, described the project as deeply personal. “My forefathers came from the Pakistan side of Punjab. I grew up hearing stories of community meals and slow-roasted spices. This menu is my tribute to those memories,” she said.
Executive Chef Vinod added that the team spent months researching traditional techniques to revive forgotten flavours. “Every dish—from the Shinwari kadai to the Qandhari naan—uses indigenous ingredients and age-old methods,” he noted.
The festival’s menu features distinctive soups like Babugoshe ka Shorba and Murgh Shobat. Vegetarian starters include Jalandhar Aloo Methi ke Sharle, Chulai aur Zimikand ke Kebab and Teh-Teh-Teh Paneer. Non-vegetarian appetisers highlight specialties such as Balochi Fish Fry, Karachi Fry Kebab, Lahori Chargha and Kebab-e-Chopan.
Main courses range from Dhingri aur Chilgoze ke Kofte and Multani Kadi to Namkeen Gosht, Murgh Shinwari Kadai and Dum ka Methi Jheengha. Rice dishes include Baghali and Dohra Bataer Sajji Pilaf, served with yogurt and kachumber. Signature breads like Smoked Jackfruit Kulcha and Posta-Dana Qandhari Naan complement the spread, followed by desserts such as Kasoor ke Andrase with Safed Gajar ka Halwa and Seb ki Kheer.
The festival continues at Afghan Grill, The Residency Towers, from November 27–December 7 , 2025, during dinner hours.
